How long does Kimchi last?
Kimchi can be stored indefinitely. The longer you leave it to ferment, the softer and more sour it becomes. Depending on how sour you enjoy your kimchi, you can store kimchi in different ways.
How do I store Kimchi
You should keep the kimchi at 39 Fahrenheit or 4 Celsius. Keeping it cold will slow down the fermentation process and prolong the crisper texture and taste. If you prefer a more tangy flavour, you can keep the kimchi in room temperature for a couple of days to ferment it even more.
My Kimchi turned sour and it's bubbling. Is this alright to eat?
When Kimchi starts bubbling and turning sour, it means the fermentation process has started. This lacto-fermentation that happens produces carbon dioxide and may make the kimchi appear to be bubbling! Not to worry though, it's just a sign that the kimchi is starting to develop a deeper and richer flavour!
