Kimchi Cream Pasta with Bacon



Ingredients

  • Serves 1 person

  • 1.5L water

  • 6 g olive oil

  • 6 g salt

  • 100 g pasta (any shape eg. Linguine or Penne)

  • 100g chopped onions

  • 2 pcs streaky bacon(each strip cut into smaller pieces)

  • 30 g mushroom(sliced)

  • 100 g FERMENTED kimchi

  • pinch of salt

  • pinch of pepper

  • 1 teaspoon of sugar

  • 50 ml heavy cream

  • 20 g parmesan cheese(grated)

  • 1 stalk spring onion(chopped)

Instructions


1. Cook Pasta


  • In a pot, bring water to a boil add in the pasta.

  • Add a little salt and olive oil.

  • Keep about 250ml of pasta water and set it aside.

  • Drain the pasta and set aside.


2. Fry kimchi and bacon


  • In a pan, fry bacon until lightly brown.

  • Add chopped onions until golden

  • Add kimchi and continue frying.

  • Add mushrooms and continue frying.

  • Add salt and pepper and sugar to taste.

  • Lower the heat, pour in heavy cream while stirring constantly.


3. Add pasta to sauce


  • Add pasta to the sauce. If it’s too dry, add in a few tablespoons of pasta water.

  • Sprinkle some parmesan cheese and chopped green onion and fold the cheese in.

  • Turn off heat.
